This blog post isn't about a
Mexican spirit you already know all too well: tequila. Nor will it be about mezcal, another popular
Mexican spirit . Instead, we at
Lili et Gordo , a shop specializing in
Mexican ready-to-eat meals , want to take you on a journey to rural Mexico to discover typical and lesser-known
spirits .
Unfortunately, you won't be able to get these alcohols here in Quebec, but you can taste them on your next trip to Mexico or make one of the recipes (
rompope or
tepache ) that we offer.
Mexican alcohol no. 1: Rompope
Rompope is to Mexico what
eggnog is to Quebec. This creamy liqueur made with white rum, originating from the convents of the
Puebla region, is prepared from chicken egg yolks to which ground almonds, cow's milk, sugar, vanilla and cinnamon are added.
Like any creamy drink, it's best enjoyed as a digestif. While this liqueur is available ready-to-drink, it's more flavorful and delicious when made at home with fresh ingredients, like the
recipe we're sharing.
Mexican alcohol no. 2: Tepache
Tepache is a sparkling beverage made by fermenting pineapple peel and zest. It is sweetened with raw cane sugar such as
piloncillo or
panela and seasoned with cinnamon, cloves, and sometimes even cardamom. For a touch of spice, a little allspice can also be added.
It's easy to make
tepache at home since the fermentation process doesn't require any culture. This is what's known as wild fermentation.
Mexican alcohol no. 3: Pulque

This distinctive-tasting drink has had its ups and downs. Following the arrival of beer, only a few
pulquerías remained—taverns where
pulque was bought and enjoyed. However, this drink is now experiencing a resurgence in popularity, perhaps due to the back-to-basics movement.
In pre-Hispanic times,
pulque was considered a divine beverage used to alter consciousness in order to better communicate with the gods.
Pulque is obtained through the fermentation of the maguey plant, which is a member of the aloe vera family.
It can be drunk neat or with fruit in a
curado , which is a
Mexican cocktail similar to a daiquiri, but with crushed fruit brought to a boil with water until it reaches a thick consistency. The mixture is then left to cool and
pulque is added.
