Recette de Caldo Tlalpeño (Soupe mexicaine)

Ingrédients

  • 2 tasses garbanzos (préalablement trempés ou en conserve)
  • 1 poitrine de poulet entière, cuite et effilochée
  • 2 carottes de bonne taille, coupées en morceaux
  • 4 chiles morita
  • 4 tomates guaje (pour la sauce)
  • oignon
  • 2 gousses d'ail
  • ramette d'épazote frais (ou 1 cuillère à thé d'épazote séché)
  • sel et poivre (au goût)
  • huile pour cuisson (environ 4 cuillères à soupe)

  • fromage frais ou panela (pour garnir)
  • avocat en dés (pour garnir)
  • coriandre fraîche hachée (pour garnir)

Instructions

    1. Chauffez l'huile dans une casserole et ajoutez les carottes. Faites-les revenir pendant quelques minutes pour libérer leur saveur. Couvrez et laissez cuire légèrement environ 5 minutes
    2. Dans un mélangeur, combinez les tomates, l'oignon, l'ail et un peu de bouillon de poulet. Mixez jusqu'à obtention d'une sauce lisse
    3. Ajoutez cette sauce à la casserole avec les carottes, mélangez bien et ajoutez les chiles morita
    4. Assaisonnez avec du sel et du poivre, puis versez suffisamment de bouillon de poulet (environ 1 à 1,5 litre) pour submerger tous les ingrédients
    5. Laissez cuire environ 8 minutes. À mi-cuisson, ajoutez l'épazote. Si vous utilisez de l'épazote séché, une cuillère à thé suffit. Vous pouvez également utiliser des tiges de coriandre comme alternative
    6. Une fois que la soupe commence à bouillir, ajoutez les garbanzos préalablement trempés ou ceux en conserve (bien rincés). Poursuivez la cuisson pendant 3 minutes
