Huitlacoche is enjoyed simply in this recipe. It is also the most popular way to eat this "mushroom" with delicate corn aromas.
Ingredients
For cooking the huitlacoche
- 300g of huitlacoche (fresh or canned)
- 1 half white onion
- 2 cloves garlic, minced
- 1 jalapeño
- 1 teaspoon epazote (optional)
- Salt and Pepper
For the quesadillas
- 10 wheat flour tortillas
- 300g Oaxaca cheese (or mozzarella)
- Cooked huitlacoche
Preparation
- In a skillet, sauté the onions, jalapeño and garlic for 5 minutes.
- Add the huitlacoche and cook for a few more minutes. Season with salt, pepper and epazote.
- Place 5 tortillas on the counter. Top each tortilla with the cheese and huitlacoche. Cover them with the remaining 5 tortillas.
- Cook the quesadillas lightly. The cheese should be melted, and the tortilla should be slightly crispy.
- Cut them into wedges and serve.
