Do you dream of recreating the atmosphere of Mexican taquerias in your own kitchen? We always love trying out new gadgets that make Mexican cuisine accessible to everyone. So when we found a homemade trompo machine for tacos al pastor, we couldn't resist!

🌮 Tacos Al Pastor, what is it?

Tacos al pastor are those famous tacos made with marinated pork, stacked on a vertical spit and slowly grilled, a bit like shawarma. Traditionally, they're found in Mexican street taquerias, served with pineapple, cilantro, and onion on warm tortillas. Until now, it was nearly impossible to replicate this technique at home… but with an affordable trompo machine, everything changes.

🛠️ Assembly and use

The device fits on the counter, can be assembled in one minute and takes up no more space than a small oven.
We chose cuts of Quebec pork with a little fat (shoulder or rump) to prevent them from drying out on the spit. They need to be sliced and then marinated with Pastor marinade (available in stores or online).

Key ingredients

  • Achiote : This spice paste gives the classic red color and a very particular aroma.
  • Pineapple : Place it on top of the trompo; its juice will drip onto the meat during cooking.
  • Dried chilies : Guajillo to add flavor without making the marinade too strong.

🔥 The cooking

The vertical spindle makes all the difference:

  • The meat cooks slowly, remaining juicy.
  • The juice from the pineapple placed on top will drip onto the meat during cooking.
  • The result: beautifully colored meat that's easy to slice thinly, just like in real Mexican taquerias.

Ingrédients

    Viande
