Tamales, a true pillar of Latin American cuisine, are now available in a multitude of flavors, ranging from classics to contemporary creations. The fundamental ingredient for achieving an authentic texture and taste is nixtamalized corn. Unlike the commonly used maize flour (masa harina), some artisans, including ourselves, prefer nixtamalised maize paste prepared in the traditional way.
This is the case of our tamales, made from fresh masa from the La Quebequita tortilleria in Sherbrooke. This artisanal method enhances the authentic flavor and texture of tamal, as found in Mexican homes.
Our varieties of tamales
- Oaxacan Pork Tamales : Prepared with nixtamalized corn dough and a savory pork garnish simmered in a traditional sauce.
-
Sweet Tamales :
- Chocolate : slightly sweet dough, filled with Mexican chocolate.
- Pineapple : sweet pastry, garnished with pieces of fresh pineapple.
Tips for successful tamales at home
- Masa nixtamalized : Opt for fresh dough, if possible, for an authentic experience.

- Natural husks : Use corn or banana leaves to wrap your tamales. They bring a unique aromatic touch.
