Today we are in La Quebequita with our tortilla supplier.

So, Roberto, please tell us about the process of making tortillas.
– Actually, the goal we had was to make the real tortillas, as they are made in Mexico.
So, we buy corn kernels.
They are cooked with a little edible lime and water.
They are left to soak overnight.
It’s called the nixtamalization process.
Afterwards, it gives a grain that is not completely cooked, but a little more tender.
That’s where we leave to spend all this at the stone mill.
The stone mill will make us a paste with moisture
that are used to make tortillas.
– Ok and if we keep them in the fridge, how long can we keep them?
– In the fridge, it can easily last a week or 10 days.
Otherwise, it freezes well too.
You just have to keep the tortillas in a plastic bag so that they keep the moisture in, otherwise they will dry out.
