- 2 L chicken consommé
- 1 cup cooked chickpeas
- 1 courgette diced
- 1 large carrot cut into large cubes
- **For the taquitos**
- **Corn tortillas, preheated** ~12 (will tease or steady)
- 2 Cups shredded chicken cooked
- **Pads**
- Mexican Cream
- grated cotija cheese
- iceberg or romaine lettuce, thinly sliced
- white onion, finely chopped
- radishes, thinly sliced
- tomato, sliced
- 1 lawyer Sliced
- fresh cilantro Chopped
- **Other**
- oil (for frying)
- (optional) small wooden sticks or toothpicks to keep taquitos closed while frying
- Salsa verde
Instructions
- Prepare the consommé: Heat the chicken broth in a saucepan. When it starts to boil, add the chickpeas, carrot and simmer for 2 minutes.
- Add the zucchini. Continue to cook until the vegetables are tender but still crunchy. Keep warm.
- Make the taquitos: Preheat the tortillas so they are flexible. Place a portion of shredded chicken on each tortilla (very generously!). Roll tightly and secure with a toothpick or stick.
- Heat the oil in a frying pan or deep fryer. Test the temperature with a piece of tortilla or chicken: if it simmers, it’s ready.
- Fry the taquitos in small batches, turning them over so they brown evenly. Drain on a drainer or on paper towels.
- To serve: Place 3 taquitos in a large deep bowl. Pour hot consommé with vegetables on top. Top generously with lettuce, onion, tomato, radish, Mexican cream, cotija cheese, avocado and cilantro.
- Add green salsa to taste. Serve immediately while it’s hot!
