Ingredients

For cooking the huitlacoche

  • 300g of huitlacoche (fresh or canned)
  • 1 half white onion
  • 2 cloves garlic, minced
  • 1 jalapeño
  • 1 teaspoon epazote (optional)
  • Salt and Pepper

For the quesadillas

  • 10 wheat flour tortillas
  • 300g Oaxaca cheese (or mozzarella)
  • Cooked huitlacoche

Preparation

  1. In a skillet, sauté the onions, jalapeño and garlic for 5 minutes.
  2. Add the huitlacoche and cook for a few more minutes. Season with salt, pepper and epazote.
  3. Place 5 tortillas on the counter. Top each tortilla with the cheese and huitlacoche. Cover them with the remaining 5 tortillas.
  4. Cook the quesadillas lightly. The cheese should be melted, and the tortilla should be slightly crispy.
  5. Cut them into wedges and serve.
