  • Bupu : Traditional from the Isthmus of Tehuantepec is prepared with white atoll, cinnamon, cocoa, icacaloxúchitl petals and other flowers.
  • Champurrado : Made with nixtamal dough or masa (nixtamalized corn flour), water and chocolate bars.

Texture is an integral part of the drink.

The two easiest brands to find are “Abuelita” and “Ibarra”. The one you will find in our Mexican grocery store is the “Ibarra”.

Ingredients

  • 1 bar of “Ibarra” chocolate
  • 3 cups milk
  • 1/4 teaspoon ground cinnamon

Preparation

  1. Pour the milk (or water) into a high saucepan over very low heat.
  2. Add an “Ibarra” chocolate bar cut into 4.
  3. When the chocolate begins to dissolve, whisk together.
  4. Add the ground cinnamon and serve.

Hot chocolate is richer when made with milk. If you prepare it with water, the flavor of the chocolate will be more pronounced. Decorate each cup with a cinnamon stick and serve with a pastry.
