Ingredients
  

  • 2 Cups Garbanzos (previously soaked or canned)
  • 1 whole chicken breast, cooked and shredded
  • 2 good-sized carrots, cut into chunks
  • 4 Chiles Morita (or optional chipotles)
  • 4 guaje tomatoes (for the sauce)
  • 1/2 onion
  • 2 garlic cloves
  • ream of fresh epazote (or 1 teaspoon dried epazo)
  • salt and pepper (to taste)
  • cooking oil (about 4 tablespoons)
  • cream cheese or panela (for garnish)
  • diced avocado (for garnish)
  • chopped fresh cilantro (for garnish)

Instructions
 

  • Heat the oil in a saucepan and add the carrots. Fry them for a few minutes to release their flavor. Cover and cook lightly for about 5 minutes.
  • In a blender, combine the tomatoes, onion, garlic and a little chicken stock. Blend until you have a smooth sauce.
  • Add this sauce to the pot with the carrots, mix well and add the chiles morita.
  • Season with salt and pepper, then pour in enough chicken stock (about 1-1.5 liters) to submerge all the ingredients.
  • Cook for about 8 minutes. Halfway through cooking, add the epazote. If you use dried epazon, one teaspoon is enough. You can also use cilantro stems as an alternative.
  • Once the soup starts to boil, add the previously soaked garbanzos or the canned ones (rinsed well). Continue cooking for 3 minutes.
  • Add the shredded chicken, toss gently and adjust the seasoning if necessary. Cook for another 2 to 3 minutes for the chicken to absorb the flavours.
  • Serve hot in bowls and garnish with diced avocado, cream cheese or panela, and fresh cilantro. For an extra touch, add a squeeze of lemon juice or pico de gallo as a garnish.

Notes

For a less spicy version, reduce the number of chiles morita or replace them with a mild chili pepper. If you like rice, you can add some to the bottom of the bowl before pouring the soup.
